Why Avoid PTFE (Teflon)?

PTFE is the chemical used to create Teflon non-stick coatings. When overheated, PTFE releases toxic fumes that can cause flu-like symptoms in humans and are fatal to birds. Many non-stick pan manufacturers have moved to PFOA-free formulations, but PTFE itself remains a concern.
